Extra Class Large
- Perfect individual truffles, size between 30gm & 200gm.
- Truffles in this class are of a superior quality
- They have a regular shape, full maturity & have strong aroma, flavour & colour
- Very slight imperfections in appearance & shape are accepted including minor clean insect
- damage if the aroma is strong
- One small nick acceptable up to 10% of the surface area
Extra Class Small
- Perfect individual truffles, size between 20gms & 30gms.
- Truffles in this class are of a superior quality
- They have a regular shape, full maturity & have strong aroma, flavour & colour
- Very slight imperfections in appearance & shape are accepted including minor clean insect
- damage if the aroma is strong
- One small nick acceptable up to 10% of the surface area
1st Class
- Excellent individual truffles, size between 30gm to 200gm
- High quality & full maturity. They have strong aroma, flavour & colour
- Imperfections in appearance & shape are accepted including clean insect damage if the aroma is strong
- The truffles will have cuts up to only 30% of the surface area
Superior Pieces Large
- Superior individual truffle pieces over 40gm
- Can be heavily cut, any shape, with clean insect damage acceptable
- High quality & full maturity. They have strong aroma, flavour & colour
Superior Pieces Small
- Superior individual truffle pieces between 15gm and 40gm
- Can be heavily cut, any shape, with clean insect damage acceptable
- High quality & full maturity. They have strong aroma, flavour & colour
Trimmings
- High quality trimmings & small pieces under 15gm
